It was pitch black at 5:00 pm. It was raining. Depressing. I decided that to counterbalance the negative effect the month of November has on us, energy-packed and healthy snacks are in order.

Having pinned a few delicious-looking ball recipes recently, and having almonds, coconut and almond butter on hand, I made these No Bake Almond Butter Coconut Bites.  I didn’t have flaxseeds but replaced them with more chopped almonds. I also substituted maple syrup with honey. Maple syrup in undeniably delicious, but honey offers more health benefits.

  1. Good idea! Energy is definitely needed here too. Our time changed the first Sunday in November which means its dark here by 5 as well. I could not live in Alaska. I miss the sun too much. Lots of cold rainy weather too. I should find that recipe. You’ve made me hungry.
